About the Suggested Wine Pairing

Our Terroir Cellars 2015 l’Ouverture is from the French wine region of Bergerac and was aged in French oak barrels, which produced a complex aromatic palate. There is a deep, ripe blackberry flavor in the attack. Later, we have notes of prune and spices like pepper or brown sugar. All of these nuances come from the different toasting applied to the oak barrels. The mouth reveals some tobacco, leather, barbecue sauce, smokiness and balsamic aromas. This wine has an elegant structure and a medium body.

  1. There is nothing like a well-seasoned steak, and Montreal steak spice has so much flavour and bite to it. The wine pairing sounds beautiful—the smokiness and spice would really come out with this steak pairing. Would you suggest using salt and pepper with this recipe as well, or does the steak spice do a good job giving it a nice sear?
